It began with a recipe tucked among the papers in the old trunk.
Written in faded French and stained from years of use, the little card described a rustic blueberry galette made with lemon, chamomile, and honey, served warm with a generous pour of sweet cream over the top. Perhaps it was a family recipe, perhaps something copied from a friend. Whoever wrote it down clearly thought it worth keeping.
Bleuette is our fragrant interpretation of that forgotten recipe: ripe blueberries folded into buttery pastry, brightened with fresh lemon and softened with golden honey and delicate chamomile, then finished with rich, sweet cream. Warm, fruity, creamy, and gently nostalgic, with that irresistible contrast of bubbling berries, browned pastry, and cool cream.
It smells like flour-dusted hands, blueberries staining a wooden spoon, honey drizzled straight from the jar, chamomile steeping nearby, and a still-warm galette on the table with sweet cream slowly spilling over its edges.
